Erik’s DeliCafe finds right recipe for growth

After 38 years of slow, steady growth, Erik’s DeliCafe Inc. has suddenly developed an appetite for accelerated expansion.

The Santa Cruz-based quick-service restaurant chain — which serves sandwiches, soups and salads for lunch and dinner — plans to at least double its current size of 29 eateries spread across six counties.

The company is taking advantage of landlords willing to negotiate lower lease rates and to provide assistance on tenant improvements to help fuel its growth spurt, according to Erik Johnson, the company’s founder and current president and CEO.
